1medium onionabout 1½ cups
1cupcarrotabout one whole carrot
½cuppeascan be frozen
½cup corncan be frozen
1½lbsground beef
½cupbeef broth
1tbspWorcestershire sauce
salt and pepper
Instructions
Mashed Potatoes
Peel and cut potatoes into small pieces (~1"-2" cubes)
Add potatoes to pot of cold water (make sure potatoes are fully covered with at least an inch of water). Add salt if desired. Bring pot to a boil and cook until tender (~20 min, fork should be able to pierce)* Can start beef and vegetables after this step *
Remove from heat and drain water from pot.
Add half of the butter (4tbsp)
Mash with fork or potato masher. Add salt and pepper to taste.
Beef and Vegetables
While potatoes are cooking, dice up the carrot and onion (~5mm cubes)
In the large pan, melt half of the butter (4tbsp) over medium-high heat (might need high heat if element is too small/underpowered).
Add the chopped onions and carrots to the pan and cook until tender (~6-10min)
Add the ground beef to the pan. Make sure to separate the ground beef into pieces and cook until no longer pink* preheat oven here *
Add peas and corn to the mixture. Cook for about a minute or two to warm it back up (especially if using frozen)
Add Worcestershire sauce, beef broth, and salt and pepper to taste.
Bring entire mix to a simmer and cook uncovered for ~10min (can do longer if the mixture is still really wet, should only have a little bit of liquid left)
Assembly
Preheat oven to 400°F (~205°C)
Spread the beef mixture in an even layer in the 9" x 13" pan.
Spread the mashed potatoes over the beef mixture (be careful not to bring up the beef to the top of the dish, use a fork and gently spread)
Run a fork over the top to add texture
Bake entire dish in over until brown and bubbling (~30min)
Bring the oven to a full broil for a couple of minutes to brown the surface (make sure to watch this entire process to avoid burning the potatoes, should be a super light golden brown with lifted bits a bit darker)
Notes
Variation Ideas:Sprinkle grated cheese (cheddar) over the top of the mashed potatoes before baking. Can add other vegetables but carrots, peas, and corn are easy to get. Add other vegetables according to their cooking time in the beef and vegetable mixture. Originally from this site
